Brulee` Rice Pudding
Prep Time: 5 min. Cook Time: 25 + Rice 15 min. Total Time: 45 min. Servings: 6-7
Use: Basmati White, Long Grain White, or Arborio White
2 cups white rice
4 cups water
1 tsp salt
2.5 cups of milk (whole milk)
pinch of salt
1 tsp vanilla
2 large egg yolks
1/3 cup sugar
additional 6-8 tablespoons of sugar
Boil 2 cups of rice using the 4 cups of water and 1 tsp of salt (refer to Boiled White Rice recipe)
In a separate saucepan, once rice s boiled and strained, mix rice, milk, and a pinch of salt.
Bring to a boil over medium-high heat.
Lower heat and simmer uncovered for about 10-12 minutes.
Preheat broiler to high.
In a separate bowl, whisk together egg yolks, 1/3 cup of sugar, and vanilla.
Stir in sugar mixture into rice and milk slowly.
Stir constantly and wait for it to thicken a bit for about 2-3 minutes.
Divide the pudding into 6-7 ramekins.
Generously cover each mixture with 1-2 tablespoons of sugar
Place on a baking sheet or pan and put in to broil for about 4-5 minutes (until golden brown.
OR, if you have a kitchen torch, you can caramelize the sugar using that instead of thr broiler.
Serve and enjoy!
