Prep Time: 5 min. Cook Time: 25 + Rice 15 min. Total Time: 45 min. Servings: 6-7

Use: Basmati White, Long Grain White, or Arborio White


  • 2 cups white rice

  • 4 cups water

  • 1 tsp salt

  • 2.5 cups of milk (whole milk)

  • pinch of salt

  • 1 tsp vanilla

  • 2 large egg yolks

  • 1/3 cup sugar

  • additional 6-8 tablespoons of sugar


  1. Boil 2 cups of rice using the 4 cups of water and 1 tsp of salt (refer to Boiled White Rice recipe)

  2. In a separate saucepan, once rice s boiled and strained, mix rice, milk, and a pinch of salt.

  3. Bring to a boil over medium-high heat.

  4. Lower heat and simmer uncovered for about 10-12 minutes.

  5. Preheat broiler to high.

  6. In a separate bowl, whisk together egg yolks, 1/3 cup of sugar, and vanilla.

  7. Stir in sugar mixture into rice and milk slowly.

  8. Stir constantly and wait for it to thicken a bit for about 2-3 minutes.

  9. Divide the pudding into 6-7 ramekins.

  10. Generously cover each mixture with 1-2 tablespoons of sugar

  11. Place on a baking sheet or pan and put in to broil for about 4-5 minutes (until golden brown.

  12. OR, if you have a kitchen torch, you can caramelize the sugar using that instead of thr broiler.

  13. Serve and enjoy!
