Coconut & Cinnamon Rice Pudding
Prep Time: 15 min. Cook Time: 1 hour Total Time: 1 hr and 15 min. Servings: 8-10
Use: Basmati White, Long Grain White, or Arborio
4 cups water
2 cups of rice of choice
8 cups of coconut milk
1 cinnamon stick OR use an equivalent amount of ground cinnamon (1 stick (3' stick) is equivalent to 1/2 a teaspoon of ground cinnamon)
2 whole allspice berries
1 14 oz. can of sweetened condensed milk
2 cups shredded coconut sweetened
1/2 teaspoon salt
Ground cinnamon to taste
Rice and clean rice. Let it sit for an hour or so (if you can)
In a large saucepan, add in rice and water.
Cook on high heat for about 8-10 minutes until the rice is cooked.
Add in coconut milk, cinnamon, and allspice.
Stir occasionally so it doesn't stick to the bottom of saucepan.
When it boils up, reduce heat to medium low and cook for an additional 10-12 minutes.
Add sweetened condensed milk and mix.
Reduce heat to low and allow it to simmer for about 30 minutes.
Stir constantly to prevent rice from sticking to the bottom.
Add in shredded coconut and salt to taste and continue cooking for another 10-12 minutes- until there is a creamy consistency.
Remove from heat and let it cook.
Sprinkle some ground cinnamon or cinnamon sugar for additional taste.
Serve and enjoy!
