Red Rice Salad
Prep Time: 5 min. Cook Time: 30 min. Total Time: 35 min. Servings: 4
Use: Himalayan Nature
1 cup red rice cooked
2-3 tbsp oil
1/2 cup of mint
1 medium onion
2-3 garlic cloves minced
Lemon zest and juice (optional)
Salt and pepper to taste
Bell peppers (choice)
Or any dressing of choice.
Cook 1 cup of Himalayan Nature Blend. (See Boiled Brown Rice for further instructions)
After rice has completely cooled, toss in cucumbers, chopped mint, chickpeas, onion, tomatoes, salt and pepper to taste, and other herbs or vegetables of choice.
Add in Tahini and some lemon juice (choice) or any other dressing of choice.
Eat immediately or chill in refrigerate. Before eating, toss everything in bowl again before serving.
For a warm red rice dish, toss cucumbers and herbs with rice while it is still warm. Drizzle over dressing. Serve immediately and enjoy!
